I’m no Gordon Ramsay but one thing I do love cooking is scrambled eggs for breakfast. Sadly, my current cookware is not non stick, and for a little while now I’ve been looking for a non-stick skillet or frying pan that can go the distance in the kitchen. At 24cm, it’s the perfect size for a range dishes alongside eggs including steak, pasta, fish and stir-frys. Its stainless steel base is suitable for different stove tops including induction, while its ceramic coating feels luxurious while also not too heavy. As a busy mum, I’m always trying to get dinner on the table in a flash, so stir fries are always on the menu. I’ve had this David & Waddell induction wok for years and, despite having a larger wok and smaller pans, use this one almost exclusively. 

It’s the perfect size for four to six servings, heats up very quickly, has a large, flat bottom for even cooking, and a long handle with a rounded hook on the end to hang it up or, as I prefer, to hold my wooden spoon while cooking.

I’ve used everything from wood to metal on it and it’s only developed superficial scratches. Absolutely perfect.

After moving onto induction I quickly discovered that only my stock pots were induction friendly. And, having just renovated, I thought I’d treat myself to a high-quality pot set. This three-piece stainless steel cookware set from Scanpan hasn’t disappointed. 

They’re similar sizes to my previous pots (16cm, 18cm and 20cm) and are very tall which is a godsend for me as I tend to underestimate the pot size needed when cooking. They’re very easy to clean, have a comfortable rubber bit on the handle for grip and are oven-friendly. Finding the best cookware for your induction cooktop isn’t easy. But here are several important factors we considered when choosing what to include in our roundup.

Materials

Different types of materials have their strengths. Here’s a breakdown of some popular options:

• Stainless steel cookware: Stainless steel heats up fast and reacts to temperature changes quickly. They’re also non corrosive and fairly durable.

• Cast iron cookware: Cast iron is durable and provides good even heat distribution. But they’re often expensive and slow to heat up.

• Aluminium: Some pots and pans have an aluminium core, which is great with preventing rusting and retaining heat. They’re also lightweight and much more affordable than cast iron. It’s usually coated with ceramic or made with a stainless steel base since aluminium doesn’t have the magnetic properties needed.

• Copper: Similar to aluminium, some cookware have contain copper for fast heating. But it’s always paired with other materials because copper alone won’t work on an induction cooktop.

Suitable for different stovetops

If you have different types of stovetops at home or regularly use a gas cooktop on camping trips, some induction compatible pots and pans can be used on gas, electric and downdraft stovetops.

Brands will usually include a symbol on the packaging to indicate if the product is induction compatible cookware. But there are exceptions, so double check the packaging to make sure your cookware will work.

Size

It’s a good idea to find cookware that matches the size of your cooktop hobs. This helps maintain a strong magnetic field and get maximum heat output. Getting a pot that’s much larger than the hob will lead to slow and uneven heating. If the pot is too small, cooking may be less energy efficient.

Oven safe

Dishwasher safe

How does induction cookware work?

Induction-friendly cookware contain ferromagnetic materials. This can be either iron, such as cast iron, or an iron-based material like stainless steel or carbon steel.

Unlike a gas stove, an induction cooktop doesn’t produce flames to create the heat needed to cook food. Instead, induction cooktops have magnetic coils that generate the heat directly to the pot by making a magnetic field between the coils and the magnetic properties in the cookware.

Placing a fridge magnet on the bottom of your pan is the easiest way to check whether any of your existing cookware is induction friendly. If the magnet sticks, it can be used on an induction cooking surface.
