Tipomisu
Tipo 00, 361 Little Bourke St, Melbourne
Forget what you know about tiramisu. Tipo 00’s version is undoubtedly one of the city’s finest modern takes on the Italian classic. Don’t come for me, Grossi. Here they fill a rye brownie puck with mascarpone cream, coat it in chocolate and smother it tableside in a hot lava of salted caramel, coffee and chocolate. The tempered shell stands zero chances of survival.

Raw tuna, white anchovies
Lucia, 11 Eastern Rd, South Melbourne
Don’t call time on raw tuna until you’ve tried Lucia’s take. Whispering in fluent Italian, our sultry sea friend seductively wraps its way around your fork like leggy prosciutto. Fermented tomato dressing, romesco and white anchovies pop off like pizza – the salt, tang, pepper heat! Boom! It’s even more affordable now than it was last month, thanks to a seasonal menu change (from $32 to $30). Mediterranean through and through, it’s unlike anything you’ll eat. Kudos, chef Jordan Clavaron.

Scallops in fenugreek leaf butter
Tipo 00, 361 Little Bourke St, Melbourne
Another from Tipo 00 as this snack was unbeatable. Podgy Western Australian scallops come bobbing in a loud fenugreek leaf butter so unbelievably delicious you’ll lick the shell clean. Praise to the OG owners Luke Skidmore, Andreas Papadakis, Alberto Fava and head chef Manjot Khatra for your hospitality.

Sri Lankan curry and unlimited hoppers
Hopper Joint, 157 Greville St, Prahran
Hopper Joint is a feast for the senses — and the hoppers are the star of the show. Use the Sri Lankan egg pancakes as cutlery to scoop expertly cooked curry of okra, minus the slime. Maybe a marlin curry is more your style: firm and tuna-densely flavoured, with wonderful cumin notes. Every diner gets unlimited plain hoppers. Just ring the hand bell on your table and more will arrive hoppin’ fresh.

Golden syrup dumplings
Hopper Joint, 157 Greville St, Prahran
One more from Hopper Joint, as those golden syrup dumplings are worth every minute of your time. Think stodgy gingerbread balls, soaked in a burnt butter molasses with cooling silky cardamom ice cream. Very filling, perhaps not the wisest move after all of those hoppers, though you won’t be disappointed.
