The 29-year-old took 25 wickets from nine games during the County Championship Division 2 campaign, including a season-best haul of 6-35 against Northamptonshire.
“He’s been in terrific form,” Greenvale director of cricket Peter Di Venuto said.
“He also has had a little bit of injury he’s had to manage and nurse.
“That hampered him during his time in the Victorian set-up, but now he’s starting to get a little bit of momentum and hopefully we see the bowler he can become.”
Sidebottom could share the new ball with experienced Western Australian quick Simon Branston, who will be part of the Roos’ Superslam squad.
Sidebottom has played 17 first-class matches for 49 wickets, but his time in the Bushrangers squad was restricted by injury.
He was one of the leading Premier bowlers in 2016-17, when he took 45 wickets for Carlton.
Greenvale has also signed ex-Premier keeper-batsman and prolific VSDCA run scorer Ricky Damiano.
“Ryan has been involved in the Victorian squad and is currently contracted to Warwickshire in county cricket on his UK passport,” Di Venuto said.
“He’s taken up that option to play at the best level of cricket he can.”

Damiano, who currently plays for Brighton, was a premiership player with Dandenong and also featured for Frankston Peninsula.
He will bring significant experience to a Greenvale squad which will also feature Tasmanian batsman Beau Webster.
The Melbourne Renegades squad member was announced as the first of the Roos’ marquee signings on Wednesday.
Greenvale Kangaroos have been grouped against Melbourne, St Kilda, Prahran, Essendon, Geelong, Footscray, Melbourne University and Carlton in the Renegades conference of the inaugural Superslam.
