Melbourne kebabs: The Scoop Train Ringwood East launches fairy floss variety

Forget the lamb, chicken and garlic sauce, a Ringwood East desert shop has created a sweet take on a popular late night snack. Wait until you see what’s in it.

A Ringwood East desert shop is shaking up one of Melburnians’ favourite late night snacks with a super-sugary take on the humble kebab.

The Scoop Train opened on Railway Ave in June and has made fairy floss deserts a key part of its menu.

Its signature item is its $15 fairy floss kebab, which is 20cm long and replaces pita or Turkish bread with fairy floss on the outside.

Customers can choose three flavours of the cotton candy, then three scoops of ice cream to put inside with sweet sauces and toppings.

They can also include mixed-up lollies such as M&M’s and Skittles, the shop’s exclusive Lego candies, or old school favourites such as coke bottles and musticks before it is wrapped together.

Owner Dave Kayser said he wanted to create another cult desert after his vanilla slices became a hit at his other nearby cafe, Bedford Coffee Co.

He said he was going through 50kg of homemade fairy floss each week and had applied for a patent for the unique desert.

“I love to put myself to a challenge … we bought a fairy floss machine and just started playing around with that,” Mr Kayser said.

“It (fairy floss) brings back childhood memories of going to the carnival, and you can’t really get it anywhere else at the moment, it’s a specialty item.”

Mr Kayser’s other flossy menu items include a fairy floss tree which is made on a wafer stick inside a cup of ice cream and crushed Oreos.

He said customers had been gathering outside his store and enjoying the kebabs similar to a post-nightclub visit feed.

“They’re going to local restaurants, having entrees and mains, and coming to us for desert,” he said.
“It’s a great social gathering and its unreal to see the community coming out and talking about them.”
