Hybrid buns the next big burger trend at The Local Burger Co

A BURGER joint in Melbourne’s outer east has dumped plain buns for crumpets, waffles and croissants in its wacky monthly specials, which have developed a cult following.

A BURGER joint in Melbourne’s outer east has dumped buns for crumpets, waffles and croissants in its wacky monthly specials, which have developed a cult following.

Croydon’s The Local Burger Co adds two limited edition burgers, a new wings flavour and a new milkshake flavour for a one-month period.

Previous creations have included using crumpets, waffles and croissants as burger buns and fillings such as lamb, kangaroo and liquid jalapeño cheese.

Owner Graham Critchley said the restaurant once went to the extreme of serving up a doughnut cheeseburger, which was rolled in sugar and filled with pickles, mustard and Mexican cheese.

“We don’t mind being a little crazy,” he said.

“If you like burger creations, you want to be able to come and get something a little different every once a while.

“People like to be adventurous and have something they’re not going to get at every other burger place.”

Mr Critchley said the restaurant at 114 Bayswater Rd now attracts customers who come specifically to try the monthly specials.

He said everything except bread was made in the store from scratch.

“We do our best to pair the food we’re making, so not only does it look crazy but it tastes amazing.

“There’s so much great food out there and the choices are endless.”

Mr Critchley said he and his chefs often collaborated to create unique flavours.

“I lived in Houston for 12 years and I was really inspired by stuff out there,” he said.

“But a lot of the great ideas come from our chefs, it’s a team effort.”
