All proceeds from chicken parmigianas sold between 12pm to 9pm on Thursday April 18 will go to the appeal.
Last year more than 300 parmas were sold, totally $6, 190.
Rosstown head chef Vic Gervasi said to beat 300 parmas from last year, his kitchen will need to be cooking one parma every 45 seconds, or one hundred an hour.
“It’s a daunting challenge but its for a good cause,” he said.
“The perfect parma is golden crunchy on the outside with white juicy chicken on the inside.”
Mr Gervasi said toppings were important too, and he’ll be using double smoked ham, a blended mozzarella cheese mix and slow cooked tomato and herb base napoli.
Phone Rosstown on 9571 1033 or Racecourse on 9571 2154 to book.
