The best parmas in Victoria have been revealed but you’ll have to head southeast to get your hands on them.

Victoria’s hospitality sector was honoured at the AHA Victoria State Awards for Excellence on Monday night, revealing the best pubs and hotels in the state.

The ever-competitive Parma of the Year awards saw The Star Hotel in Sale take out the coveted regional title, while The Bay Hotel in Mornington was crowned Best Parma in the metros.

The Star Hotel’s award-winning parmigiana comes topped with shredded ham, house-made Napoli sauce and a two-cheese blend, priced at $32 for a full serve or $25 for a half.

The Bay Hotel’s version features Napoli sauce, smoked ham and cheese, served with chips and a leafy salad for $30.

Hotel Sorrento claimed the coveted Overall Hotel of the Year – Metro, edging out top contenders including The Continental Sorrento, The Terminus Hotel in North Fitzroy, and The Grand Hotel Warrandyte.

In regional Victoria, The Crown Hotel in Traralgon took out Overall Hotel of the Year – Regional, recognised for its standout service, venue experience and contribution to the local community.

Brendan Anderson of The Victoria Rutherglen was named Chef of the Year for delivering modern pub fare packed with bold and innovative flavours.

Bill Perry from The London Tavern Hotel received the industry’s highest honour, the Nikakis Benchmark Award, acknowledging his sustained excellence and leadership.

AHA Victoria’s chief executive Paddy O’Sullivan said Mr Perry had adapted with the times without ever “losing the soul” of the Richmond pub.

“This publican has mentored generations, supported our industry quietly and steadily, never seeking recognition, just getting on with the job,” she said.

Dylan Tudor from The Grand Hotel Warrandyte was named Emerging Leader of the Year, with judges saying he “ticked every box in the judging criteria”.

Morgan Hampstead, of Sawyers Arms Tavern in Newtown, was crowned Venue Manager of the Year for “leading with warmth, trust and a genuine connection with both staff and patrons”.

Craig Shearer, owner of The Terminus Hotel in North Fitzroy, was awarded Local Legend of the Year.
