New bakery Mrs Jones the Baker opens in Freshwater

Savoy-trained husband and wife pastry chefs open their first bakery, Mrs Jones the Baker, in Freshwater.

Freshwater has a new artisan bakery.

Mrs Jones the Baker opened on the weekend with a range of French patisserie, old-fashioned favourites, gluten-free treats, coffee and gelato.

Small business owners Barry and Lucy Jones have brought their high end baking skills to the northern beaches.

“We met working as pastry chefs at The Savoy when I was 18,” Lucy Jones said.

“I’ve worked at Harrods and Barry was the youngest executive head pastry chef at The Dorchester when he was only 25.”

The couple came to Sydney in 2000 and their CV includes roles as executive head pastry chef at Star City Casino and Bathers’ Pavilion and Royal Sydney Golf Club.

“Barry oversaw the opening of all the restaurants at the Casino,” Mrs Jones said.

“I’ve worked at Merivale, Bathers’ Pavilion and head pastry chef:at Royal Sydney Golf Club.”

The Lawrence St premises is their first business. With 3am starts, the husband and wife team wanted a shop near their Seaforth home.

“We’ve moved into the old Chinese restaurant,” she said.

“We’ve gone for a contemporary fitout, there’s a big glass window so everyone can see us working.”

Chocolate thong-shaped cakes and filled doughnuts are walking out of the shop, Mrs Jones said.

“Our doughnuts are selling out and we’ll always have a Freshie thong, at the moment they’re made with chocolate and salted caramel.” she said.

New lines including gluten-free bread and mini cakes will be added over the summer, Mrs Jones said.
