THE former sous chef at Sheraton on the Park has breathed new life into an old establishment in Mosman.
Chef Daesung Moon and restaurant manager wife Claire Lee opened August The Old Place on the prominent corner of Military Rd and Gouldsbury St last month.
The couple have lived in Mosman for three years and Moon said it feels like home.
“I have been eager to try something new,” Moon said.
“In Mosman people are nice and there are many beautiful heritage buildings.
“Mosman is really unique; a combination of the young generation and older generation.”
Moon said the busy thoroughfare was perfect for a restaurant.
“There are many shops and people who want to go Taronga Zoo and Balmoral Beach,” he said.
Moon’s cuisine is modern Australian and he offers a seasonal menu using fresh produce.
“Every single plate is special,” he said.
“Customers say ‘wow’; they have not seen dishes like mine before and at a reasonable price.”
Moon migrated to Australia from Korea to pursue a career as a chef about 15 years ago.
He has worked for five-star international hotels in Canberra, Brisbane and Sydney, including the Sheraton for two years.
On the menu
August The Old Place is open seven days a week at 707 Military Rd, Mosman.
The all-day brunch menu includes maryland crab cake benedict with poached eggs, horseradish sriracha remoulade and potato bravas.
The dinner menu includes New England clam chowder with pumpkin, celery, bacon, thyme and grilled bread.
