Celebrate lamingtons today, with baker who creates trendy versions of cakes calling for national holiday

Brookvale baker Kirin Tipping is pushing to have National Lamington Day, today, declared­ a public holiday. She’s even created 300 versions- including trendy red velvet.

BAKER Kirin Tipping is pushing to have National Lamington Day, today, declared­ a public holiday.

“It’s all about cake and suits the Aussie lifestyle,” she said. “And if it were a public holiday, you wouldn’t be in your work clothes and it wouldn’t matter if the coconut dropped off.”

Ms Tipping has been baking iconic Aussie cakes in her Brookvale bakery since 2012. She started on the advice­ of her shrewd nieces and uses a buttercake recipe rather than a traditional sponge.

“It has really surprised me just how popular they have been,” she said.

“The secret is coming up with new flavours.”

In that time she has added 300 varieties including jaffa fudge, mango ginger tango flavoured with Australian glance ginger and mango and a chocolate-y one topped with smashed Violet Crumble to her collection.

One of the most popular is a ruby red velvet lamington, based on a New York red velvet cake and covered with red chocolate icing.

Truffle salt is one of her more unusual ingredients.

“I was given some truffle salt a couple of years ago, so I had to use it. I put it with honey roast walnuts and choc chips,” she said.

“I still make them.”

Lamington fans will have to celebrate a day late, the business is only open on Fridays and Saturdays.

The cakes were named after Lord Lamington, Governor of Queensland from 1896 to 1901, after being created by his chef.

LusciousKiki Cakes is at 16 Sydenham Rd, Brookvale. It’s open from 8am-3pm.
