The historic Camden Vale Milk Depot’s transformation into an inner city-inspired dining hub is expected to move up a gear, with construction hoped to begin in coming months.
Bespoke Developments NSW development manager George Saaib confirmed the unique $8 million dining precinct, to be known as The Milk Factory, would include a whiskey bar and other high quality offerings.
“The Milk Factory will be a destination where we hope that people will go out of their way to experience,” Mr Saaib said.
“Without name dropping a business because we won’t until we are fully leased, expect to see a whiskey bar, Asian fusion, charcoal BBQ and artisan bakery.
“We have had very strong interest in the development and are selectively negotiating leases with businesses that provide a unique and high-quality dining experience.
“We could easily bring in the common franchises but this isn’t in line with our vision for the development.”
The development was touted to open its doors by spring this year, with the company originally hopeful of starting construction six months ago.
The project was approved by Camden Council in 2017.
Mr Saaib said significant engineering changes would minimise the impact on the existing Camden Vale Milk Depot building.
The building will also highlight the line of the historical train tracks which once passed the site.
