THOUSANDS of customers will be fishing for seafood over the coming days in preparation for their Easter feasts.
All rods will lead to the Sydney Fish Market, with Good Friday the biggest trading day of the year at the Pyrmont institution.
The shopping frenzy starts at 5am and about 55,000 people are expected to snap up more than 440 tonnes of seafood.
For Musumeci Seafoods part-owner Con Doukas, preparations for the Easter rush start not long after the Christmas scramble is over.
“It’s a massive, massive workload,” he told the Inner West Courier.
“You always start a couple of months before hand, bringing staff in and training them and getting them ready just for that particular day.
“To give you an idea, you probably go through an equivalent of a week of sales just in that one day.”
Mr Doukas will be ready to roll at 1am on the day — and the business will be primed to cope with the crowds.
“We’re pretty much relaxed about it ... we’ve been in the fish business for over 35 years, so we know exactly what to expect and what to do,” he said.
Mr Doukas said the most popular items for Good Friday are snapper, barramundi and salmon.
Sydney Fish Market general manager Bryan Skepper said the facility was more than just seafood.
“Sydney Fish Market is the one-stop shop to prepare for Easter, offering everything to create a delicious feast,” he said.
The Easter bunny visits from 10.30am-12.30pm.
