Quoi chef to open rooftop restaurant at Opera, Norwest Business Park

The chef behind the Hills’ only hatted restaurant has revealed plans to open the area’s first rooftop eatery atop a commercial and residential complex.

Chef Joshua Mason, who helms the Hills’ only hatted restaurant, Quoi Dining, has revealed plans to open the area’s first rooftop restaurant atop a $33 million commercial and residential complex, Opera, at Norwest Business Park.

The rooftop establishment, to be called Ciel, which translates to sky in French, will be perched atop the eight-storey block in the complex at 7 Maitland Place.

Along with the rooftop restaurant, Opera will house cafes and bespoke office suites and meeting pods to create “a post-COVID workplace”.

Developers Haitchin Commercial approached Mason to woo workers and residents with his culinary finesse, which, in time, he hopes will notch up another hat like Quoi, which he opened in 2017.

“I think if we’re going to do something, we’ll do something special,’’ he said.

“With a new and exciting venue you’ve got to have the reputation and experience to match up with it.’’

Quoi restaurant is contemporary French Australian and Ciel is likely to take some fine dining inspiration from the same cuisine, while Mason is anticipating continuing to serve The Hills diners, who love “quality food’’.

“The Hills people are smart people, they’re quality people and they want to be served quality, good quality food,’’ he said.

“They like a good wine list and they love a friendly smile.’’

Haitchin general manager of commercial development Robert Tasevski has welcomed Mason to the fold.

“What Josh delivers is unique,’’ he said.

“It’s the look but it’s the taste that explodes.’’

With developments sprouting up across The Hills, it’s not the first time developers have approached Mason to flex his culinary flair for their projects but Haitchin allowed him to “align myself with people I feel comfortable with’’.

He will assess the future of Quoi closer to the opening of Ciel, which is expected to start operating in 18 months.

Notching up a hat will hopefully follow.

“I wasn’t always wanting to 100 per cent achieve hats but I always knew it would come over time because … the mentality of ‘I want to get hats, get hats, get hats’ … it’s about the people,’’ Mason said.

“For me it’s about what do the Hills people want?

“If I get a hat I’m grateful, if I don’t, that’s life.’’
