Dennis Chan’s Dirty Bird fried chicken food truck had a star encounter with the international pop songstress when they traded at The Voice Australia’s grand finale this month, where Perry performed.
Perry loved their fresh fried chicken so much, she emerged from the set and ordered another seven burgers.
“She just came out of nowhere,” Chan said.
“She came out to get a burger and take some photos with fans and then she ordered another seven burgers.”
The scene was – to say the very least – frantic.
“Everyone was getting out their phones and taking photos,” Chan said.
“I was just standing there holding a burger – speechless.”
Chan is a relative newcomer to Sydney’s food scene – but already patrons claim he makes the best chicken in the west.
People wait up to an hour to get their hands on his chicken at Paddy’s Night Food Markets in Flemington.
“We gave out feedback sheets at a pop-up in Cabramatta in December – the response was overwhelmingly ‘it is the best chicken in the west’,” Chan said.
Chan is a pharmacist, but a 2015 encounter with a chicken restaurant in America made him drive down a different path.
“I tried this chicken in Tennessee and I thought if I could reproduce something like that in Australia, it would be a huge winner.”
Asian influences and a crunchy batter set the Dirty Bird specialties apart.
“We incorporate Asian flavours like garlic and ginger in the marinades,” Chan said.
Dirty Bird also pops up at Food Truck Weekends in Wetherill Park, Macarthur Night Markets in Campbelltown and Wash My Ride in Moorebank.
