A new dine-in restaurant with a five-bedroom apartment above has been proposed to Dubbo Regional Council for the CBD.

Plans for an Italian restaurant have been lodged for 87 Macquarie St – the former Westpac bank – aimed at providing a “dine-in experience” for Dubbo foodies.

Plans include the restaurant with a full bar, wine store, commercial kitchen, public and staff amenities and pizza oven.

The licensed premises is designed to accommodate up to 80 patrons.

According to the developer, the proposed site will have a five-bedroom serviced apartment above the restaurant with two chefs residing in the residential space alternating between shifts.

“Two chefs based outside of the Dubbo region will operate the Italian restaurant, and will work alternate weeks at the restaurant,” the developer said.

The developer said the apartments were “designed” for their stays and would provide accommodation for their family members if required.

According to the planning documents, the developer aims to “encourage a range of tourism, recreation and entertainment uses in the Dubbo central business district”.

The developer also stated they aim to “strengthen the viability of existing centres through increased economic activity and employment”.

“Building facades adopt a contemporary appearance relating to the function of the building and the characteristics of surrounding development in the locality,” the developer said.

“New facade works will be in keeping with the existing heritage fabric of the building.”

The proposed operating hours will be from 5pm to 10pm from Wednesday to Sunday.
