THE GANTRY

From sturgeon farming in Canada to wild food foraging in the Southern Highlands, award-winning chef Thomas Gorringe’s interest in artisanal products and native ingredients has taken him around the world, not just to meet with producers but to actually work the land, gaining a first-hand experience of the whole production process.

It’s no surprise then that one of those adventures became his inspiration for The Gantry’s delicious. Month Out offer — a specially-curated vegan four-course tasting menu featuring Pine Mushroom Pierogis.

“Most people don’t know that mushrooms have a peak season,” Gorringe explains.

“They’re at their best from the equinox through to the first frost.”

Renowned for a more meat and fish-centric menu that highlights local ingredients, Gorringe admits he took on the plant-based menu as a personal challenge, working to create dishes that push beyond the typical meat-free options, yet still be both delectable and satiating, traits that are most evident in dessert — a vegan coconut-cream based with feijoa poached in sauvignon blanc and passion fruit juice topped with a vegan white-chocolate crumb.

The Gantry is located in historic Walsh Bay at Pier One Sydney Harbour, right at the base of the iconic Sydney Harbour Bridge.

Expect to a see a few torn looks when first you enter Chuuka, a refurbished boatshed at the end of Jones Bay Wharf, as patrons invariably work their way through the quandary of whether to continue gazing out over the Harbour water towards Barangaroo Reserve and the Harbour Bridge or be taken in by the culinary masterpieces delivered to the table.

This dilemma is courtesy of Victor Liong (Lee Ho Fook) and Chase Kojima (Nobu, Sokyo), who bring together Chinese flavours with Japanese artistry and precision, both on display with their Ikura Salmon Roe Service ($45), a unique offering in line with American Express delicious. Month Out.

Presented in a shallow platter-sized cobalt blue serving dish, a small bowl of Ikura Salmon roe, surrounded with petite ceramic ramekins for cashew cream, golden egg yolk shallots and chives, along with potato rice crackers, sits atop a bed of crushed ice.

CIRRUS

Location. Location. Location. It’s hard to imagine a more ideal site for a seafood-centric restaurant than along Wulugul Walk in Barangaroo.

An avid supporter of sustainably-caught seafood and local producers, Savage (who is also a judge for the annual delicious. Produce Awards) has created an innovative menu that reflects the bounty of the nearby waters with dishes such as the butterflied rainbow trout with onion rings and goats curd tartare, the scallop and bay lobster dumplings with sweet onion milk and buckwheat, or the ruby-red WA Marron with salted duck egg and chilli, all of which can be paired with Hildebrandt’s carefully selected wines.

Cirrus also boasts an enviable position on the northern end of the esplanade affording diners with have an unobstructed Harbour view from both inside the restaurant and at the expansive outdoor dining area wrapping around the curved glass windows.

With the cooler months approaching and the throngs of people heading back inside to escape the chill, now is the perfect time to play tourist in your own town.

OTTO RISTORANTE

While it may not be carved in stone, Sydney has an unofficial list of must-try dishes and holding fast towards the top is OTTO head chef Richard Ptacnik’s lobster spaghetti.

THE STREETS OF BARANGAROO

Diners go to great lengths for dinner at a single waterfront venue — long drives, boat rides and even jaunts on private planes, but at Barangaroo, the destination alone is worth the trip, just minus the restrictive travel plans.

Named after botanist Sir Joseph Banks, the first person to formally document Australia’s plants and botanicals, it’s no surprise that at Banksii, many of those botanicals show up on both the food and drinks menu.

There are few that embrace the paddock-to-plate principle more than famed Australian chef Matt Moran. It’s that knowledge and know-how that makes Sydney’s Chophouse a delicious destination for the carnivores among us.

THREE BLUE DUCKS

Quintessential Australia – sun, sand, farmland food. Three Blue Ducks first opened its doors in Sydney suburb Bronte 10 years ago.

It began with former Tetsuya chefs Shannon Debreceny, Mark Labrooy and Darren Robertson merging a fine dining experience with beach casual featuring “honest, innovative and local food”.

They still pilfer their backyard garden but delivering fresh ingredients is much easier now with The Farm in Byron Bay.

Oysters are the pearls of The Morrison Bar and Oyster Room in downtown Sydney.

They’re drifters no more as NOMAD is back at their original location on Foster St after spending 12 months in some temporary digs up the road.

BECKETT’S

You only get one chance to make a first impression and for Jeff Schroeter, chef and co-owner of Beckett’s, the moment he stepped inside the historic sandstone building, and former site of farm-to-table Indian restaurant, Darling Mills, he knew he was home.

Or at least his home away from home.

“When I walked it in it was like getting a hug,” says Jeff, admitting that while he had visions of something more casual, “she”, as he likes to call the restaurant, seemed to want something more formal.

IIKO MAZESOBA

All is in plain sight at this relatively new addition to the global ramen scene. At IIKO Mazesoba the traditional broth is swapped out for a concentrated sauce at the bottom of the ramen bowls.

“So every ingredient has to be super fresh, as there’s nowhere in the bowl to hide,” says owner Michelle Widjaja.

TERMINUS HOTEL

Truly a labour of love, resurrecting the Terminus, a 150 year-old hotel that lay dormant for 33 years, “seemed like a good idea at the time,” says David Mathlin, co-owner and part instigator of the massive endeavour.

A phenomenal $2 million makeover erased the decades-long decay, rebooting the stunning emerald tiled bar with clever cocktails, craft beers and a menu by renowned chef and delicious Produce Awards Governing Board member, Colin Fassnidge.

For the American Express delicious. Month Out he showcases his nose-to-tail food philosophy and refined take on pub classics, with a bespoke two-course menu.

It starts with fish and citrus soup and cheesy bread followed by a chicken and leek pie ($35pp).

“Fresh and locally sourced produce not only supports the local communities and smaller farmers, but it also allows us to serve people a more wholesome end dish with love from growing to the end product,” says Fassnidge.

“The delicious Produce Awards are something I am extremely passionate about.”

SPICE ALLEY

While that trip to Singapore may have to wait tick a longer, you can still find the foods of its famous hawker centres at Spice Alley in Chippendale.
