BLACK BAR & GRILL
From backyard BBQs to hatted-restaurants, anyone who has ever cooked over fire knows that there is a fine art to grilling, and just like art, everyone has a different style and opinion.
For award-winning chef Dany Karam, it’s his global culinary experience paired with Australian produce and a genuine passion for this cooking process that makes BLACK Bar & Grill such a delectable standout.
The unique dishes on Karam’s exciting menu reflect his Lebanese upbringing, Michelin-starred French restaurant training, and premium ingredients, all of which are on full display, but just for mum.
Come Mother’s Day, Karam has created an awe-inspiring Fruits de Mer Seafood Tower that features Western Australian marron, Sydney rock oysters and spanner crab poached in olive oil and finger limes.
“Mums do such a great job all the time, so they really should be spoiled on their special day,” says Karam.
Served with a glass of NV Moet & Chandon Champagne, “this beautiful and tasty seafood is the way to do it”. ($175 pp, minimum two guests).

CUCINA PORTO
Having spent years working behind the scenes with some of the biggest names in cooking, such as Jamie Oliver, Martino Pulito is finally leaving the kitchen to walk the floors at this casually chic authentic Italian restaurant.
Gregarious and engaging by nature, he loves engaging with customers just as much as he loves cooking for them — be it pasta from the north or seafood from the south.
“I want to give an old-country experience. I want to know what they like and what they think of the food,” Pulito says.
And with regulars making up the majority of his customers, he admits he often relies on their constructive criticism when making additions or amendments to the menu.
So when it came to a Mother’s Day offering, he went straight to the source — “a group of nonnas that come in every Friday” — and asked them what they’d like.
They went through a list together and settled on prawns flambe ($30).
“They told me that they don’t really care what they do as long as it’s with family, but it’d be nice to have something you can cook at home but never do — king prawns. A nice simple, old-school Brandy-based flambe.”
There will also be a special Mother’s Day cocktail, a Bellini Splash made with peach sorbet and prosecco ($18).
To make it an extra decadent dinner (or lunch) for the whole crew, indulge in dessert, more specifically through to May 31, in conjunction with the American Express delicious. Month Out, a classic Italian dessert board featuring a tiramisu, whipped ricotta, pistachio and chocolate chip cannoli, bignè, cioccolato e lamponi and torta della mamma ($64, serves four). That’s amore. (For terms and conditions, visit amex.com.au/delicious)

TAYIM
Rather than doing the token dinner thing for mum, why not make the most of the outdoor and spend the afternoon playing tourist in your own city.
You could start with a stroll through the Botanic Garden, take selfies in front of the Sydney Opera House, and exploring The Rocks.
That should work up an appetite and good thing as you’ll need plenty of room for the Mother’s Day feast at contemporary Middle-Eastern restaurant, Tayim.
Located along a tiny laneway in a historic sandstone brick building, your whole crew will enjoy a three-course lunch featuring dishes made using recipes from the previous chef’s mother back in Libya, such as zucchini stuffed with pine nuts, Urfa birber and sheep yoghurt; salt and spiced cured kingfish in a jalapeño and apple tomato broth; Tajima MB6 beef cheek, and for dessert, caramelised filo pastry with honey cream and fig. ($100pp, kids $45).
Head chef Nathan Dennard said: “While these are dishes Middle Eastern mums would make for their families at home, everyone knows mums shouldn’t have to cook on Mother’s Day.”
