Now a new South East Asian restaurant at The Star is serving up lobster rice paper rolls topped with salmon roe.
Rumble is the latest edition to the list of acclaimed restaurants at the precinct which include Chase Kojima’s Sokyo, Flying Fish and Black Bar and Grill. The new restaurant takes up residence next to the Lyric Theatre.
Head chef Benjamin Tanis originally from Malaysia and has worked in China, India, Europe and South Africa.
He has drawn on his experience with both Asian street food and fine dining to create a menu that aims to balance the four classic flavours that permeate South-East Asian culinary culture – sweet, spicy, sour and salty.
Highlights of the menu include pork belly bao and 48-hour beef rendang black angus short ribs in a Malaysian stew.
“People have come in and said the menu is really interesting,” Tan said.
Tan said compared to Asia, he’s still getting used to Sydney’s early dining trend.
“It’s surprised me,” he said.
