One Eastern Suburbs icon meets another with the revelation a Totti’s Pasta Bar will appear in the Members area of the soon-to-be opened Allianz Stadium.
The iconic Bondi restaurant with a 12-week wait will open an outpost in the stadium called Totti’s Pasta Bar serving up a selection of classic dishes.
While in the General Admission areas, the humble cheeseburger has been given a Merivale style-glow up in a cheeseburger spring roll as part of an outlet by Ms G’s and Mr Wong’s Executive Chef Dan Hong.
This is just some of the new inclusions Justin Hemmes’ Merivale has revealed as the official hospitality partner of the stadium.
There are 64 food and beverage outlets across the stadium, many similar to the group’s offerings to the venue’s neighbour, The Sydney Cricket Ground.
However the inclusion of an outpost of Totti’s, which was recently featured in the Delicious 100 list for 2022, in the Members stands is a point of difference.
The menu, curated by Executive Chef Mike Eggert, includes a range of antipasti like Mortadella, Burrata and Marinated peppers and pasta dishes like Fettuccine with Stracciatella and Bolognese Parpardelle. While the cult-like Neapolitian Ice Cream Sandwich is offered for dessert.
While Hong’s El Loco Mexican brand was behind the hotdogs at the SCG, he’s been given his own dumpling and noodle stand in general admission at the SFS. The outlet will feature Cheeseburger spring rolls, pork buns, steamed prawn Har Gar Dumplings and Salt and Pepper Squid.
Newport’s Berts restaurant, led by Executive Chef Jordan Toft, will also be given a member’s outpost with Bert’s Bistro. It will offer a sit down, European bistro style meal and where people can enjoy the finer things in life like Oysters with a Chardonnay Migonnette, cured salmon and duck liver pate.
And for main? Well it’s grilled lobster of course or wagyu sirloin bernaise of course.
Toft, who last week opened The Collaroy, said the menu was designed to encourage people to head to sporting games or events early.
“At Bert’s people have a two hour booking but find they stay for five. While that’s not possible at the stadium, the idea is that people can sit and enjoy high quality food done simply.”
The area will also serve up classic cocktails like negroni’s and martinis and have an extended wine list available.
The new outlets will join Vinnie’s Pizza and Jimmy’s Falafel outlets.
When it was revealed Merivale was the hospitality partner at the stadium, there was concern from some that the offerings would stray far from traditional footy fair.
Toft, a die hard West Tigers fan, adds while offerings of lobster at footy matches is certainly different, all the footy favourites are still available.
“We’ve elevated the quality of the basics. I promise the hot chips we serve will be better than before,” he said.
In a statement, Hemmes said the stadium will be “the jewel in the crown of Sydney’s sports and entertainment landscape.”
Allianz Stadium will kick off it’s opening series of events on August 28 with Guy Sebastian to perform.
The first game to be played at the new venue will be the grudge match between Eastern Suburbs Roosters and The Souths Sydney Rabbitohs on September 2.
