Thanks to TikTok, there is a taco trend in town.

The messily delicious Birria, or wet taco, has taken off online, and Sydney’s food scene has benefited from it.

The taco originated from the same place in Mexico as tequila — the Birria is a crispy-fat fried tortilla dipped in a meaty soup.

During lockdown the Pyrmont cafe Quick Brown Fox owner Ben Calabro his partner Anna Mavromatis, decided to open a pop-up takeaway taqueria, Buen Taco, serving the saucy dish as well as frozen margaritas.

“Anna and I were at home watching Netflix show about the birra and we thought, let’s try it. The cafe had closed due to lockdowns, so we had nothing to lose,” Calabro said.

Soon after head chef Regan Bagshaw was making close to 400 tacos a sitting — not to mention serving a few frozen margaritas.

Subsequently from Wednesday, Buen Taco will open in the evenings for dine-in customers. The restaurant will utilise Quick Brown Fox’s alfresco dining set up, to create a food truck vibe, as well as introducing a DJ and live music on the weekend.

“Tacos are a universal language. They are unpretentious and approachable,” says Calabro. “Obviously Covid was so hard on our industry, but diversifying into this new business has changed our whole life.”

“There are still restrictions and the fight is not over for us, but, the tacos have been a silver lining to a sh**ty situation.”

As for the name? Calabro explains, “We wanted something easy to remember. Buen means good and the tacos are genuinely bloody good.”
