From caviar bumps to Sports Clubs: Jordan Toft to feed members of exclusive Sports Club of Sydney

Justin Hemmes’ Merivale group has taken over one of Sydney’s most exclusive clubs, with his executive chef designing a new menu.

The chef that is credited with bringing the caviar bump to Sydney is now in charge of the food direction at one of Sydney’s most exclusive clubs, the Sporting Club of Sydney at Allianz Stadium.

Merivale’s Executive Chef Jordan Toft, of Mimi’s and Bert’s fame, has designed a menu for S.C Canteen inside the private club below Allianz Stadium.

It was previously Azure cafe, run by George Gavalas and Dennis Dionatos, who have been with the members for 17 years.

In an email sent to members of the club, it stated that Toft has designed “a produce-driven menu to nourish and refuel. The menu will take members from breakfast to lunch, including wholesome breakfast bowls and some familiar favourites.

A variety of grab-and-go food options will also be available, along with coffee, smoothies and juices.”

Merivale already has a contract with Allianz Stadium and The Sydney Cricket Ground, opening outlets like Totti’s and Berts inside the stadiums. However up until last week the cafe in the gym, was separate.

Gavalas said he’d been “overwhelmed” with the outpouring he received from members when they departed last week.

“It was amazing to see the effort people made to come up to my staff and say thank you. We had numerous people write cards,” Gavalas said.

Many of Sydney’s biggest sporting and business identities have been seen using the gym and cafe in The Sporting Club of Sydney, including Former Prime Minister Malcolm Turnbull, former Wallabies coach Eddie Jones, model Natasha Oakley and Rugby Australia boss Phil Waugh.

The cafe at the Sporting Club of Sydney is only available to members of either the stadium of the gym itself.

The club includes two squash courts, virtual golf studio, 25m indoor heated pool, 50m heated outdoor pool with pool cabanas, a day spa, hot spa, cold plunge pool, infrared sauna, traditional sauna and steam rooms.

Membership to the Club alone costs starts at $5000, however they are currently sold out and it’s not expected that any will be offered for another five years.

S.C CANTEEN will open on Thursday 4 July ahead of the Wallaroos vs Fiji and Wallabies vs Wales Test Match double-header on Saturday.

Meanwhile Gavalas is set to open a cafe at the nearby Entertainment Quarter in early August.
