Brooklyn Depot: Burger bar to open at Stones Corner laneway

A popular burger chain is opening its third Brisbane store in six months, choosing an iconic suburban shopping strip as its new home.

A Brisbane burger favourite is set to defy the uncertain economic conditions by throwing open the doors to its fourth restaurant in the river city.

Incredibly, this will be the third new restaurant Brooklyn Depot, which has its flagship store at South Bank, has opened in the past six months, after it opened locations at Brunswick St, Fortitude Valley in July and Racecourse Rd, Hamilton in December.

Now, continuing its spread into suburbia, the chain’s latest venture will be located in the new Bower Lane development on Logan Rd, Stones Corner, and will look more like South Bank than Hamilton or Fortitude Valley, which are billed as ‘Express’ stores.

Owner Danny Sibillo said the restaurant will open the week of February 14 if all goes to plan.

Mr Sibillo said he moved into the site, which is located at the base of The Bower At Stones Corner, a serviced business centre, at the invitation of his landlords.

“This is a brand new side of Stones Corner, a new development with a lot of people working upstairs,” Mr Sibillo said.

“I saw how busy it was and I want to keep doing things outside the Brisbane CBD area.

“This restaurant will be sit-down service, fully licensed, a massive bar with beer, wine, cocktails.

“We’ll have al fresco tables in the laneway, we’ll do trivia nights, Frat Tuesdays for students, ribs nights, you name it.”

Mr Sibillo said there will be about 15 – 16 employees at the new restaurant, most of whom will be moved from his existing sites.

According to the website for Brooklyn Depot’s South Bank website, the restaurants aims to be “your ultimate hangout – inspired by Old Brooklyn confidence and swagger, but with our renowned laid back Aussie style.”

“The emphasis is on sharp service, impressive but affordable menus, and a bustling American vibe.”
