Take home your own brew with gin and cocktail classes with leading flavoursmith

The owners and operators of Sandstone Point Hotel and Eatons Hill Hotel have launched the Comiskey Distillery and renovated their neighbouring bottle shop with 300 wine barrels.

The names behind big SEQ venues the Eaton Hills and Sandstone Point hotels plans to distil vodka, gin, rum, bourbon and their signature spirit Comiskey Whiskey out of a 1000 litre copper still on-site — and will throw open their doors to the public tomorrow.

Located next door to the Eatons Hill Hotel, at Eatons Hill, the distillery will feature gin and cocktail workshops, act as a spirit and cocktail training facility for staff across the Comiskey Group and by early 2023, you’ll be able to order Comiskey Distillery’s range of spirits throughout the group’s portfolio of hotels; Eatons Hill Hotel, Sandstone Point Hotel, Samford Hotel and Beachmere Hotel as well as bottle shops.

Attendees will craft and take home their very own 500mL bottle of gin, made from a mini traditional Alembic copper still, with over 100 botanicals to choose from.

Master Distiller Colleen Walters will lead the workshops, a highly regarded flavoursmith with over 500 Fine Food and Distilling Awards and a judge the Royal Sydney Fine Food Awards.

The on-site liquor barn Harry Brown has also been renovated and expanded with a European marketplace design, complete with 300 authentic wine barrels, antique trucks, exposed brick, copper display stills and more.

Located next door to the new distillery, customers can look through a connecting glass window with the landmark 1000 litre still in plain sight.

Comiskey Distillery spirits will be bottled with a signature label design with each bottle signed by director Paul Comiskey, a stamp of approval on each batch.

Director Rob Comiskey is excited to endeavour into the world of distilling.

“Having owned pubs and bottle shops for many years, it feels like a natural progression for us,” Mr Comiskey said.

“We’ve been actively working on this project for over a year and are very much looking forward to seeing the concept come to life.

“We did a soft launch of our Gin Workshop across Eatons Hill Hotel’s platforms just over a week ago and saw an unprecedented level of interest with all 2022 classes pretty much sold out.

“We have already put sessions online for 2023, with gift cards available just in time for your Christmas present shopping!

Director David Comiskey is leading the construction team at the distillery and hopes the community is surprised by the new and improved bottle shop and enjoy the new distillery.

“From idea to production, we are working meticulously to make a line of spirits our family is proud of,” Mr Comiskey said.

“We have worked in and are passionate about the hospitality industry, so this is an exciting new chapter, serving our own drinks.

“We know all too well that after a hard day’s work, there’s nothing better than a well-earned drink, we aim to create a product worthy of reward.

“Eatons Hill Hotel has been open for over 11 years now, within the last few years we’ve added accommodation and a shopping centre.

“Despite so much going on, we are always looking for ways to keep our offering fresh and exciting for the community.”

This new endeavour has been just one of the many announcements over the last few months for the Comiskey Group, with a 150 hectare festival site, Coochin Fields, and an entertainment venue, Aura Hotel, coming to the Sunshine Coast, as well as hotel developments at Dakabin and Strathpine.
