One of Brisbane’s best independent butchers plans to expand production on the northside by creating a new processing and packing plant within its Stafford warehouse.

Meat at Billy’s has consistently rated among the top 5 butchers in Brisbane with premium cuts of meat that have won them thousands of fans since their opening in 2009.

A spokeswoman from the company said the butcher saw a marked increase in demand for its products following the coronavirus-related lockdown in March.

In order to cope with the overwhelming number of online bookings, Meat at Billy’s opened a distribution warehouse at Wolverhampton St which has thus far been limited to click and collect orders and deliveries across Brisbane.

“We needed to put plans in place to process these orders offsite and no longer at our Ashgrove store,” the spokeswoman said.

The development application submitted to the Brisbane City Council this week proposed an additional production of up to 200 tonnes of meat each year, primarily conducted within specially designed shipping containers.

If approved, it will be the third processing facility to be opened by owner Billy Gibney, who works with local farmers and employs ex-chefs dedicated to taking a personal approach to their craft.

The additional store is predicted to reduce the long wait times seen at its Rosalie and Ashgrove stores.
