Sarina siblings taste success as business undergoes large revamp, expansion

The trio behind a popular Mackay cafe are on the move to a bigger premises, as they also bring huge changes to their name, look and menu.

The Sarina siblings behind the Third Ground Coffee House are moving into a new space, as they overhaul their menu and step into the world of fine dining.

Jana Temple, and Wesley and Skye Bailey have run the cafe on Central St since 2017.

Now they are moving their cafe into larger premises in a more strategic location, renaming it the Roots Collective, and expanding to offer a fine dining experience with a restaurant, wine bar and bakehouse.

“We were surprised by the response from Sarina (residents),” Mrs Temple said.

“We opened at Third Ground to especially give our customers a preview of the in-house baked goods that will be on offer in the Roots bakehouse next year.

“We opened for four hours each day and sold out of all baked goods in two hours.

“We are so overwhelmed by the support from our community.”

She said they spent three months renovating their new Bruce Highway premises, with family members rallying to help transform the century-old building.

“It was a fish and chips store on one side and a garage on the other,” Mrs Temple said.

“We have been recycling all of the old material. There was no grease trap and we had to get people up for Brisbane to install it.”

Roots employs 30 “incredible” staff including the siblings, who are all hands-on owners.

“We chose to call it Roots Collective to reflect our return to the community, simply where we’re coming from,” she said.

“We have listened to our customers and put a lot of thought into the new venue to ensure it will be a beautiful, vibrant and family-friendly space.”

The opening of the new premises at 46 Broad Street, Sarina is scheduled for February.
