The nitty gritty details of one of the city’s most highly anticipated restaurant openings have been revealed, with Australia’s most recognised chefs of Middle Eastern cuisine behind the project.

Located at Queensland Ballet’s Thomas Dixon Centre in South Brisbane, Shane Delia’s first northern restaurant, Layla, is set to reinvent the dining scene in the city’s arts hub.

Layla, chosen simply as a name Delia liked and always knew he would name a Brisbane venue, will open to the public from March 28.

Known for his iconic Melbourne venues Maha East, Maha North and Jayda as well as his regular television appearances and cooking programs, Delia said he was excited to take guests through an “unrestricted spice journey” with his new venue.

“All of my venues have a Middle Eastern overlay, which will still be a part of Layla,” he said.

“Opening a restaurant in an entirely different climate, I’m excited to do something different and draw inspiration from other parts of the world, working with incredible fresh Queensland produce.”

The menu offerings at Layla, while still well under wraps, are likely to feature spice-forward, Middle Eastern-inspired cuisine that will mark the perfect new venture head chef Simon Palmer.

Palmer draws from some immense experience, hailing from some of the city’s most iconic venues, like Urbane, Gerard’s, Ecco Bistro and Black Hide by Gambaro.

Layla will act as the ideal location for pre- and post-performance dining and form the basis for what is set to become an expansive retail and hospitality precinct at the Thomas Dixon centre.

Diners can expect to enjoy an immersive culinary experience between two starkly different spaces at Layla, from a moody dining space indoors, to a fresh, bright outdoor courtyard space.

Layla is taking bookings for lunch and dinner from March 28.
