Awhopping 750sq m bar and restaurant with uninterrupted ocean views is set to become one of the hottest destinations in Queensland when it opens in June.

Coast Beach Bar & Kitchen will launch in the new Meriton Suites along the Esplanade at Surfers Paradise, taking over half the first floor of the glamorous hotel.

Behind the enormous project is husband and wife hospitality teamJustin andElizabeth Allie, who own nearby Longboards Laidback Eatery and Bar in ­Surfers, as well as Southport’s The Fish Shak and catering company Gourmet en Counter.

“It’s a place we’ve designed around entertaining for people from intimate celebrations with your partner to family occasions or dining out with friends,” Mr Allie said.

The sprawling tenancy will be split into a 160-seater bar that overlooks the beach, with a stunning umbrella-covered balcony for wining and dining, plus curved banquettes and low and high tables inside; as well as a 110-seater restaurant at the back, specialising in seafood and steak designed to share family style.

Ex-Jellyfish and Cha Cha Char chef Rhett Williswill be in the kitchen, cooking as much ­locally sourced produce as possible. That means about 12-15 starters in the restaurant, such as oysters and brioche-stuffed with chicken liver parfait, as well as shareable mains like smoked tomahawk steaks and whole roast chickens in XO sauce to be eaten with a range of about 10 sides, including salads, various forms of potato and corn ribs in miso butter.

The restaurant will also have its own dry ageing room to elicit maximum flavour from the Queensland beef.

“We’re not trying to go too fancy, I want it to be like this relaxed, casual dining,” Mr Allie said.

Meanwhile, in the bar, guests will be able to listen to live music and DJs while sipping signature cocktails and eating snack-style fare, such as local trawler prawns and charcuterie.

Both venues will offer wines from a bespoke 2500-bottle wine fridge, which will take centre stage in the restaurant, with up to 140 wines – roughly 80 per cent of which will be Australian, and include only the best of the various grape-growing regions.

There will also be an impressive vintage vino collection featuring prized drops from Torbrek, Yalumba, Veuve Clicquot and more.

Gold Coast design firm Space Cubed Studio is doing the fit-out, which is set to echo the restaurant’s land and sea theme with muted colours of blue and green alongside brass and leather, with a standout 14m long bar.

Coast Beach Bar & Kitchen is pushing to open June 11.
