Celebrity chef Luke Nguyen reveals Qld’s spiciest noodle dish

Is this Queensland’s spiciest noodle dish? Celebrity chef Luke Nguyen believes so.
The TV kitchen whiz and cookbook author has created a char kway teow for his Fat Noodle restaurant at Treasury Brisbane in the CBD using a fiery 8kg of the world’s hottest chilli, the Carolina reaper.
“It’s traditionally served with this lovely chilli paste so it’s not overly spicy, but we’ve hit this one to make it the spiciest noodle dish in Queensland,” Mr Nguyen said.

The chef was inspired to create the dish, which will be available throughout May as part of the American Express delicious. Month Out campaign, by Brisbane’s recent cold weather.
“Charring those noodles and combining it with these reaper chillies I thought what a great dish to have when it’s a bit cold. It’s a street food dish but it’s quite comforting and when you have these reaper chillies you really warm up,” he said, with the chillies dried and dehydrated first before being made into an oil.
Mr Nguyen described the dish as “exceptionally hot” but said chilli fiends could ask for it even hotter, with the noodles able to be made bespoke depending on a customer’s heat tolerance.

TASTE TESTED: ‘SWEAT WAS ROLLING DOWN MY FACE’
Spicy curries and I aren’t exactly the best of friends, so you could imagine how I might have reacted when I was told that I’d be trying Queensland’s spiciest noodle dish.
Don’t get me wrong, I love a good Butter Chicken, but beads of sweat formed as soon as I heard that the ominously named Reaper chili was involved.
The first mouthful wasn’t as bad as I’d feared, but the second mouthful featured a sliver of the Reaper, which just about knocked me off my seat with its power.
Twenty minutes later and after several glasses of water, sweat was still rolling down my face and my hands were still shaking.
So, the dish that was designed to warm us up in winter did exactly that. I felt like I was on fire. If you love spice and you’re after a challenge, well, good luck to you.
