This opera singer starts his day with a green juice. A simple tweak could make it more nutritious
Opera singer Diego Torre, 43, shares his day on a plate.
6am Tea, then a homemade green juice with ginger, kale, pineapple, celery, green apple and lime.
9am A long black with toast.
1pm A Reuben sandwich before heading to wardrobe fitting and rehearsals. I stay hydrated all day and avoid eating anything before my performance. The digestion process can be uncomfortable when singing.
6.30pm A cup of coffee.
11.30pm After performing for three hours, I make a Mexican dish called alambre with beef, capsicum, onion, bacon, lime and melted cheese.

Top marks for … Your green juice, as this delivered most of your fruit and veg for the day. It is, however, better to have this blended rather than juiced, to ensure you retain all of the fibre and nutrients, otherwise many are lost in the extracted pulp. Top marks, too, for staying hydrated.
If you keep eating like this you’ll … Fall short on the antioxidants that come from a diversity of plant foods, as well as healthy fats and nutrients including magnesium. Eating so late at night is associated with weight gain, so rejigging your eating schedule may be of benefit.
Why don’t you try … Eating a more substantial brekkie, such as an omelette with spinach and mushrooms, or adding avocado to your toast. Snacking on nuts and berries in the morning and adding a side salad or vegie soup to lunch will help to keep your post-performance dinner light.
