6.45am After a swim at Maroubra’s Mahon Pool, I grab a strong latte. Then I head home to make a hot chocolate and toasted bread breakfast for my daughter and to walk the dog.
9.30am My second and last strong latte of the day at my new restaurant, Bistro Red Lion By Manu.
11am In the kitchen, I try the quality of a fish dish of pan-fried mulloway with foaming butter and lemon, all tossed together in an iron plate from my Culinary Co collection.
11.45am A fresh baguette and homemade paté before lunch service, which finishes at 3pm.
5pm I enjoy a cheeseburger from our bar menu before the dinner shift starts.
9.30pm Fromager d’Affinois cheese, baguette croutons with poached pear in red wine and honey-candied walnut.

Top marks for… Having excellent taste in cheese! The things you pair with it also give you the only fruit and nuts in your day (albeit not in the healthiest forms). A plus too for having your final coffee early in the day as caffeine negatively impacts sleep.
If you keep eating like this you’ll… Miss out on the phytonutrients, found in plant foods including fruits and vegetables, that help us to age well and prevent chronic disease. Your lack of fibre puts you at risk of gut problems with knock-on effects over all aspects of health.
Why don’t you try… Having a substantial breakfast to get nutrients in early and cut back on what you eat at work later in the day – a mezze-style plate with salad greens, wholegrain sourdough, avocado, hummus, sauerkraut, eggs, falafel and labneh would tick many boxes. Put a wholegrain burger bun on the menu at your restaurant and serve the burger with a salad!
