San Churro chief executive Kerri Wane and her team spoke to 108 candidates and shortlisted 28 before hiring Jarrod Appleby as the company’s new chief operating officer.

Ms Wane said the dessert chain needed a COO who could overcome “really tough trading conditions” to help the business meet its target of opening 20 new stores a year – and Mr Appleby fitted the bill.
