At 24, Hugh Allen is both repeating history and renouncing it. Repeating it, because his boss, Shannon Bennett, was that age when he launched Vue de monde in Melbourne's Carlton nearly 20 years ago. And renouncing it, because after two relocations – first to Little Collins Street, then, in 2011, to its current home atop Rialto Towers – the upscale eatery is changing direction again.

Just not geographically this time.
