Just six months after launching in South Australia, an Aussie restaurant chain has announced expansion plans.

Hecho en Mexico, a beloved street-style Mexican restaurant started in Melbourne, opened its first SA eatery on Peel St in the city in July.

On Monday January 20th it will open a second site – this time in Prospect.

To celebrate the expansion, they’re offering $5 tacos and $13 margaritas for the first two weeks at the new Prospect Rd location.

Parveen Bajar, who co-founded the brand with friend Menak Grover, said the “incredible” response to the Peel St store gave him “great confidence” the second location would be a similar success.

Mr Grover said in the six months since opening, “thousands” of customers had been through the doors.

“We know Prospect will be just as popular and we can’t wait to open our doors for all from Monday.”

The new restaurant’s opening would create 15 local jobs, the duo said, in addition to the 20 employees who work at the Peel St location.

Hecho en Mexico, which was founded in Fitzroy, now has 23 locations across Australia.

Its extensive menu that includes burritos, burgers and salads, with gluten-free and vegan options has become a recipe for success amid the doom and gloom of Adelaide’s restaurant closures.

In the past year, a slew of businesses shut their doors as a cost of living crisis hit alongside skyrocketing operating expenses.

These included longstanding institutions such as Cardone’s at Jetty Rd, Glenelg, and Martini’s on the Parade, in Norwood, to newer establishments like My Lover Cindi, on Pirie St, burger bar chain Cheffy Chelby’s and Port Adelaide nightclub Confession.

Despite the closures, recently released data from the Australian Bureau of Statistics (ABS) showed in the last months of 2024 more restaurants and cafes opened in SA than anywhere else in the country.

More than 140 new ventures opened in the state between September and November – representing 28 per cent of new restaurants and cafes Australia-wide for that period.
