First look inside Roma, the new restaurant, deli, cafe and piazza from Callum Hann and Themis Chryssidis

Top restaurateurs Callum Hann and Themis Chryssidis say their revamped city dining precinct will bring the best of Italy’s food culture to Adelaide.

Located just off Waymouth St, Roma is a casual restaurant, lunch-focused deli and outdoor cafe with an elevated piazza. It will officially launch on Wednesday following a month of extensive renovations.

The three-pronged, Italian-themed offering replaces eleven, the modern Australian venue the duo opened in 2021.

The overhauled restaurant will feature a modern Italian menu with traditional dishes – including a spaghetti carbonara the equal of any in Rome – mixed with fun, Australian classics given a Roman twist.

Hann and Chryssidis have completely revamped the alfresco cafe and bar area, which will serve up aperitivo drinks, cocktails, wines and coffee, plus added a deli in the adjoining Arbor Lane laneway, offering takeaway lunches and all-day snacks.

Central to the deli’s lunch menu is Roman-style, thick crust pizza, made famous by celebrated Italian chef Gabriele Bonci.

“Themis and I are both massive Gabriele Bonci fans, so this was an easy decision,” said Hann.

“Plus there will be fresh made salads, house made pastries, cheese, cured meats and a range of Italian condiments and snacks. The food is designed to be fun, relaxed and non-intimidating.”

Chryssidis said their new dining precinct, located next to the new Adelaide Marriott Hotel, had “something for everyone”.

“It’s a complete casual dining experience in the heart of the city,” he said.

“You can come for a drink during aperitivo hour or have a relaxing lunch in the restaurant followed by drinks in the piazza and deli snacks into the night.”

Chryssidis said last month that the changes were necessary to take advantage of the completion of the nearby $200m Marriott Hotel and adjust to Adelaide’s changing dining scene.

“The food scene has changed enormously in the last few years and people want value for their money and we want to give them that,” he said when announcing the project.

“The food is still going to be fun and innovative but at the same time, we want it to be a casual place where people can enjoy a bowl of pasta and a glass of wine or a beer, or you can sit down with friends and have a long night as well.”

In November last year, Chryssidis and Hann opened new Mediterranean-focused eatery, Olive, on Pirie St in the city, offering “big flavours”, generous share plates and all-day dining.

The duo, who co-founded Sprout Cooking School in 2011, also teamed up for Mediterranean eatery, Lou’s Place, at the Lou Miranda Estate cellar door in Rowland Flat, in 2020.
