A high-end CBD restaurant that closed its doors earlier this year after finding it “increasingly difficult to remain viable” is set to reopen – but with a tantalising twist.

An upmarket West End restaurant which closed its doors earlier this year will reopen as a sophisticated wine bar to meet the changing dining market.
Stem, on Hindley St, shut down in March, with its owners saying the decision was “regrettable” but the venue had become “increasingly difficult to remain viable”.
The space has since been refreshed and will relaunch on Friday as Canopy, a stylish bar with a heavy emphasis on wines, led by former Stem sommelier Henry Bampton.
Mr Bampton said the new direction was dictated by Adelaide’s changing dining habits.
“Hospo is doing it tough. It’s always difficult and sad when a venue closes but the pivot was a response to what people are wanting,” he told The Advertiser.
“It’s all the pomp and ceremony of going out for dinner but without the pressure of a full-on meal. I know personally, I feel better spending my money on a bottle of wine if I don’t have to pay $100-$150 a head for dinner as well.
“I think that’s what people are looking for right now.”
Mr Bampton said Canopy is a destination for wine lovers, showcasing an impressive selection of bottles ranging from rare international vintages to boutique local producers, all at various price points.
There’s a particular focus on back vintage wines, or those that have been stored for several years.
Mr Bampton said he’s most looking forward to opening their bottle of 1971 Conterno Barolo, which retails at Canopy for $1250 – but can be found interstate for upwards of $3000.
“You don’t see this kind of wine list in Adelaide, the breadth and depth, there’s something for everyone at all times,” he said.
It’s not just about wine with mixologist Lorenzo Di Pasquo curating the extensive cocktail menu, bringing a “playful and modern twist” to the classics.
Mr Bampton, 26, who’s previously worked at Magill Estate, Hardy’s Verandah and Fishbank, said charcuterie and high quality snacks will also be available. These range from house-made kimchi toasties and truffle salami melts to French caviar with chips, and grilled chorizo gildas.
“These wines are so special, they can go with food or they can go by themselves,” he said.
Canopy will launch on Friday at 4pm, and be open Wednesday through to Saturday.
