Viral tiny trifles are THE dessert trend to watch this Christmas

If you’re anything like me, you’ve been tasked with or have volunteered to make Christmas dessert this year. 

I believe there is no greater responsibility in life than being in charge of Christmas dessert. While ham, prawns, and salad are important, everyone eagerly waits for dessert and prays it’s not just Nan’s Christmas cake. 

For the past couple of years, I’ve been in my #TrifleEra. The versatility of flavour combos and aesthetically pleasing layers makes me a trifle fiend. Last year, I made our lemon and peach trifle which was summery, divine and absolutely demolished by my family. 

This Christmas I’ll be making trifle again but I need something simpler than a classic one that’s easy to prepare, easy to transport but still encompasses classic trifle flavours. 

So, I’ll be making our VIRAL little trifle cakes (and you should too!) 

The mini dessert trend

As we’ve said a million times, everything mini tastes better – and small versions of all the most classic desserts have been trending for us this year: think mini cheesecakes, baby impossible pies and miniature custard tarts.

That’s why Taste’s food director, Michelle Southan, decided to shrink trifle too. These almost-too-pretty-to-eat trifle cakes make up the best parts of a classic trifle but enjoyed in bite-sized morsels. 

How to make our mini trifle cakes

Starting things off, the base of the trifle cake is simply a slice of jam sponge roll soaked in sweet sherry (which you can totally omit if boozy trifle is not your jam). 

Then comes one of the most important parts of trifle: the custard and cream. Michelle takes some whipped cream and folds it into custard. To make these trifle cakes stand on their own, she adds gelatine to the custard cream mixture and then pours it over the sponge slices.

These little trifle cakes are finished with a layer of raspberry jelly, plus some cream and raspberries, to serve. 

Jolly AND delightful. 

Travel-friendly Christmas dessert ideas

If you’ve got to travel to your Christmas festivity, these trifle cakes are much easier to transport than your traditional trifle. You can simply leave them in the moulds and then pop them out and add the final touches when you get to your destination.

Trust me, I’ve transported a heavy, huge trifle – not fun.

Make your little trifle cakes in advance

While we’ve got plenty of Christmas dessert recipes on-site you can whip up an hour before you have to leave, this little trifle cakes recipe isn’t one of them. Michelle says: “These little cakes require 5 hours to chill all up. Just make sure you’re not leaving these to the last minute!”
