We’re sure you don’t need convincing that mum deserves spoiling on her special day. Considering all the breakfasts, lunches, snacks, and dinners she likely provides throughout the year, what better way than to cook her a lovingly prepared meal?

Breakfast in bed

Pancakes drizzled with syrup and served with sweet fruit are always guaranteed to be a winner and with our wholemeal pancakes with caramelised apples, citrus ricotta pancakes or vanilla hotcakes you can even do some of the preparation the night before to make it easier in the morning.

If mum is more of a savory breakfast type, check out our delightful Creamy spinach and egg pots or Arabian Buttered Eggs with Mint and Lemon for an exotic, but surprisingly easy to prepare, twist on breakfast. Our no-fry Baked Eggs are perfect for kids to prepare for mum.

Luxury lunch (or decadent dinner)

Give mum a good long sleep in and treat her to a fancy home-cooked lunch instead. Here’s a great selection of ideas ranging from simple and healthy (Leek potato and lemon Thyme frittata or Grilled salmon with cumin butter sauce and asparagus) to the more exotic (Roast lamb with couscous date and pistachio stuffing). Our delicious Chicken and white wine pie can be ready in just half an hour. Or, for something really special, try our Tuscan-style porchetta.

If you’re planning a special dinner menu instead these lunch suggestions will work just as well. How about a modern twist on roast chicken? Or try our Sweet potato cannelloni with Garlic béchamel. If mum loves seafood, try our 5-star Prawn fettuccine followed by one of our decadent dessert suggestions.

Afternoon tea

Spoil mum silly with some sweet afternoon treats. Scones are easy to make with the kids and we have a selection of flavours to choose from, including Pumpkin and date, Buttermilk scones, White chocolate, or even Sticky date scroll scones. Just don’t forget the freshly whipped cream and jam.

Special sweet treats

Another lovely idea is to bake mum a cake or other extra special dessert, such as crème brulee or an indulgent, baked lemon cheesecake or an easy chocolate mousse. We’ve got some wonderful recipes you can try, from an Apple tea cake that is sweetly simple and will fill the house with gorgeous aromas, to a totally lavish tasting White chocolate panna cotta with stewed strawberries, that is remarkably simple to make.

Just don’t forget to do the washing up! Happy Mother’s Day.
