If you’re no stranger to baking, you’re probably equipped with the know-how for hacking your recipes. But there are some hacks that even the most experienced bakers haven’t tried. We can guarantee some of you don’t know about the dump-cake technique that’s beloved among the taste team members… and we would place bets that some of you don’t know what I’m about to tell you.
You can use cake mix to make not just cheat cakes, but biscuits too.
How to make cookies using store-bought cake mix
Our method for baking the perfect cookies is as easy as ripping open a box of cake mix. The essentials are all taken care of – with everything pre-mixed and ready to combine with your butter and egg.
I had actually forgotten all about this technique until I found a lone box of chocolate cake mix in the pantry this weekend. I wasn’t craving chocolate cake, I was craving biscuits. And then I remembered our recipe developer Tracy Rutherford’s hack, which started our very own cake mix cookie recipe.

Why use cake mix to make biscuits?
Many cake mixes, such as this Green’s one from Coles, come in powder form. This means that not only is half the mixing work done for you, but you don’t need to worry about having sugar, bicarb soda and cocoa powder stashed somewhere in your cupboard taking up unnecessary space.
So all you need to do is add butter and egg, roll the mixture into balls and bake just like any cookie.
What does cake mix do to cookies?
Because they’re made with traditional cake ingredients, these biscuits end up slightly softer on the inside than traditional cookies – and who doesn’t love a chewy-middled cookie? But don’t worry, they’re still crunchy on the outside like your favourite choc chip cookie.
The best way to decorate cookies
Because you save time on the weighing and mixing part, you can spend more time getting creative and decorating your cookies! Tracy tops these ones with choc chips, peanuts, coconut and marshmallows, because she wanted a rocky road vibe – but I’ll also try them with chopped lollies and white choc chips sometime too.
These rocky road versions will be really charming come Christmas time, but you could take them to the next festive level with silver cachous, festive sprinkles or even edible glitter. The kids will love to get involved and you’ll really impress whichever family, friends or teachers you gift them to.
