Do you have bananas, eggs and self-raising flour hanging out in your kitchen? If so, you’ve got everything needed to create these cute, easy and healthy pancakes. We love using our pie-maker to cook them, but if you don’t own one, don’t worry! You can pan fry them instead (like ordinary pancakes) over medium heat for 2 minutes on each side.

What’s the trick to making good pancakes?
The secret to making fluffy and light pancakes is to not overmix the batter. In this recipe, we’ve suggested the mixture be combined, then left to rest for 10 minutes. This gives the flour time to absorb the liquid which will result in the perfect airy and fluffy pancakes.
What’s the most important ingredient in pancakes?
This might be a no-brainer, but FLOUR! This is the ingredient which gives the pancake structure and texture, making it the most important ingredient. The type of flour used can also determine the consistency of the pancakes, so make sure you use the correct variation (in this recipe, self-raising flour is the way to go).
What are the best pancake toppings?
Pancakes are like the blank canvas of the food world, and that’s why we love them so much. It’s entirely up to you what you do with them, how you top them, and how you enjoy them. Classic toppings include banana, berries, maple syrup, and whipped cream but feel free to get experimental with them. We’ve even topped pancakes with hundreds and thousands to create fairy bread pancake cereal!
