Cheese and bacon cob loaf

There are few shared party foods that have the luring appeal of a cob loaf. A freshly baked, carved loaf filled with a molten, cheesy savoury filling and golden top, ready to dip, sends party guests into a zombie-like frenzy toward the snack table. A cob loaf challenges will power and brings people together. And thanks to a recent resurgence in its popularity, it’s become a hallmark of Australian get-togethers. Not sure what to bring to your next gathering or serve at a backyard do? Try out this ever-popular cheese and bacon cob dip by taste member, ‘dakky.’ As one reviewer of this recipe has suggested, once you put this cob loaf out, you’ll soon be only, ‘left with crumbs.’ Though this is one of our all-time favourite savoury cob loaf filling recipes (and Australia’s favourite!) taste.com.au is home to a staggeringly large collection of cobs! From the classic spinach-filled cobs, to the sweet cob loaf varieties: if you can dream it, we can cob it. We also have great ideas for mini cob loaf recipes. Bruschetta

Many of the world’s most-loved dishes were created out of necessity and poverty. Italians were masters of taking whatever was on hand and crafting it into dishes we know and love today. This cooking, known as cucina povera (the food of the poor) has given us pasta (just flour and water), polenta and thick bean soups. Nothing went to waste either. In particular, stale bread was given a second life in soups, salads or as pangrattato fried breadcrumbs served sprinkled over pasta when parmesan was out of reach. Bruschetta is another great example of Italian ingenuity. Stale bread was grilled over hot coals, rubbed with homegrown garlic, drizzled with olive oil and topped with straight-from-the-vine tomatoes. Our favourite recipe for bruschetta riffs a little bit on the original, with the punch of fresh chilli and freshness of basil. Perfect for a snack, entrée or canape.

Karaage chicken (Fried chicken)

If you’ve perused the menu of a Japanese restaurant recently, you’ve probably come across the term ‘karaage.’ This cooking technique – which involves lightly coating an ingredient (often chicken, fish, other meats, or cheese) then deep-frying it – can be added to our long list of things we can thank Japan for (alongside sushi, ramen and electric rice cookers). Having lived in Japan, for me, the scent of karaage sizzling in oil conjures images of cosy izakayas where karaage chicken is commonly served alongside salted edamame, Japanese pickles and other enticing bar snacks. Karaage is also a welcomed addition to bento boxes for picnic lunches in Japanese gardens. Here in Australia, karaage chicken (or perhaps our gluten-free karaage haloumi, for the vegetarians and gluten intolerant among us) can be plated up alongside a helping of fresh slaw, enveloped in tacos or wraps, and, of course, air-fried. For a flavourful dinner, toss together a pickled salad and add a spoonful of fluffy jasmine rice to your plate for a Japanese-inspired, crispy karaage chicken dinner.
