Fruit toast topping recipes for a healthy breakfast

Toast doesn’t have to be boring. From jam with a twist to baked cheese, here’s a list of exciting toppings for your morning munch.

1. Fruit jam…with a twist

Love a generous dollop of jam on your morning fruit toast? Try something a little different with homemade nectarine jam with a cheeky dash of liqueur. If you prefer a plain jam, try adding a spoonful of whipped cream on top just before serving to give your breakfast that high tea feeling.

2. Macadamia chocolate spread

Everyone goes crazy for classic chocolate hazelnut spread, but we’ve discovered something even better! Simply whiz up some macadamias in a food processor with cocoa, icing sugar and vanilla for the ultimate brekkie spread.

3. Grilled figs and goat’s cheese

It’s simple to make breakfast into a gourmet occasion with this combination of sweet grilled figs and creamy goat’s cheese. Drizzle with a little honey just before serving.

5. Passionfruit curd

Traditionally spooned over pavlovas or fruit salads, passionfruit curd is a surprisingly good addition to fruit toast, especially when topped with thin slices of fresh fruit. Experiment with other fruit curds such as lemon curd or mango curd to find your favourite combination.

6. Molten baked brie

From salted caramel to maple-coated bacon, foodies have long fallen in love with the combination of sweet and salty. Tantalise your tastebuds and try something new and very special by combining hot baked brie with a thick slice of toasted fruit bread.

7. Poached fruit and yoghurt

You’ve heard of brinner – breakfast for dinner, now discover the wonder of dessert for breakfast. We’re not sure if ‘bressert’ has quite the same ring, but we certainly won’t be passing up the opportunity to eat this beautiful combination of poached seasonal fruits served on brioche.

8. Fresh fruit tarts

Now, this is smart! Use a rolling pin to flatten slices of fruit bread and then press into muffin tins. Bake for about 8 minutes at 180C or until the bread is golden and then fill with vanilla yoghurt and fresh fruit. Keep this quick and easy idea up your sleeve for your next breakfast or brunch get-together.
