Fattier cuts of lamb or beef need bolder-flavoured reds with high tannin levels, such as cabernet sauvignon or shiraz. If you’re opting for a leaner cut, like porterhouse steak or lamb backstrap, fruity reds like grenache or sangiovese are perfect. STILL using up the Christmas ham leftovers? Throw slices on the barbie to crispen up and serve with a citrussy sangria.

Seafood and margaritas
Baby octopus, bugs, lobster and calamari all lend themselves to a sweet and salty margarita cocktail. Ole!
