Mother’s Day high tea recipe ideas
Mother's Day is just around the corner. Spoil Mum this Sunday with a fancy high tea, made from the heart.
There are lots of morning tea-related trends right now. Scones are absolutely huge, so we’ve got some of our easiest ones EVER that anyone could make. Quiches and sausage rolls are also super-popular this year, while chocolate slices are making a big comeback. Here are some of our experts’ best ideas for Mother’s Day 2024:
5-ingredient raspberry and white chocolate scones
You only need flour, lemonade, cream, raspberries and white chocolate to make these delectable treats. Serve them with whipped cream, of course.
Ham and leek mini quiches
We use frozen ready-rolled pastry to make these delicious cheesy quiches. You’ll have 24 of them on the high tea table in less than an hour!
Lobster finger sandwiches
You could go with classic cucumber, smoked salmon or egg mayo sandwiches for mum’s day, but these little lobster numbers are just that little bit more special.
Lemon tea
The Queen herself would have told you that the proper way to drink Earl Grey tea is with a slice of fresh lemon. We love it with honey and cloves too, especially when winter is approaching.
Double chocolate mousse cake
You actually only need 5 ingredients to make this super-indulgent dessert cake. Its 5-star rating and rave reviews speak for themselves!
French onion cheese puffs
We can’t get enough of these cheesy little morsels… and we think your Mum will love them too. Make a dough with mozzarella, parmesan and French onion soup mix, then air fry until golden and delicious.
Jam drops
Google searches for jam drops are up this week, partly due to kids returning to school but also because of Mother’s Day approaching. It’s easy to understand why: who doesn’t love a buttery biscuit with a dollop of jam baked into it?
Lemon custard tea cakes
These little lemon cakes with an oozy custard filling have been getting rave reviews ever since they were first published. Our members describe them as “so easy to make”, “absolutely delicious” and “perfect with a cuppa”!
Mini cheese and bacon “sausage” rolls
Mum’s probably made about a gazillion sausage rolls in her time, but these ones are a little bit different. Instead of sausage meat or mince, they’re overstuffed with bacon, ricotta and a 4-cheese blend to make them super indulgent and gooey on the inside.
Champagne cocktail
A French 75 is the ultimate classic champagne cocktail, made with gin, lemon, sugar and your favourite sparkling white. Don’t forget the cherry on top!
Choc caramel Anzac biscuit slice
Who doesn’t love a classic caramel slice? This one uses Anzac biscuits as the base for extra crunch and flavour. We sometimes enjoy cutting it into smaller squares to make cute bite-sized pieces.
Butter-bath scones
We only discovered “butter bath” scones last year, and they’re still really popular. You make them by literally bathing your scone dough in melted butter when baking. Add some cheese and bacon and you’ve got yourself the most amazing soft scones.
