I don’t keep a very stocked pantry. I have a small fridge where I keep most of my food, and an even smaller cupboard above the stovetop to store dry goods. This means that recipes with incredibly long ingredient lists are just not for me. So when I discovered this 4-ingredient potato bake, I knew I had to give it a try.

Australia’s favourite side dish

Like most people living in Australia, I’m no stranger to an ol’ fashioned potato bake. The thinly sliced potatoes, the creamy luscious sauce, the golden cheesy top… I’ve definitely sampled a few bakes in my time (there’s over 80 different potato bake recipes here alone!) But that also means I’m very particular on what a good one should taste like.

Let me tell you, this one blew me away… and I didn’t expect it to. It’s the perfect side dish when you’re craving something cheesy and comforting, and it takes regular potato bake to the next level.

Taste digital food director Amira Georgy is the brains behind this masterpiece, and when we asked her about the dish, here’s what she had to say:

“It’s often tricky to get creative with side dishes. I know our followers love recipes that are easy but still pack a flavour punch, so I wanted to create a recipe that ticked all those boxes.”

It’s all in the sauce: the secret ingredient

So what makes this potato bake so special? Coles Special Burger Sauce.

You can’t have a potato bake without cream and cheese, so I wanted something that was really going to ramp up the flavour, hence the burger sauce,” Amira says.

Because it’s made from very few ingredients, it’s also super simple to make. Start by layering your potato slices into a baking dish, adding a third of a jar of thickened cream, drizzling over the burger sauce and sprinkling with cheese. Repeat two more times until you have three layers in total.

You want to bake the entire dish for just under an hour before adding a final extra layer of cheese (yes, more cheese!), removing the foil lid and baking for another 10 minutes. This gives the whole dish a super golden cheesy crust while the potatoes stay tender and delicious.

“I first tried the potato bake with parmesan cheese, but I didn’t get that lovely stringy texture,” confessed Amira. “So I tried it again with pizza cheese and viola! It was perfect. Another win? My kids gobbled this down very quickly!”
