Thought 90s picnic favourite the scotch egg was long forgotten? It just made its return... in a modern appliance.

Hard boiled eggs? Covered in sausage meat? Deep-fried? Scotch eggs have always been a little strange to me. Don’t get me wrong, I love those three components separately, but putting them together was never something I was tempted to try.

According to history, scotch eggs were created by an eatery in the 19th century. Originally covered in fish paste, they were invented as a portable meal for travellers. Over time, the recipe has changed to include sausage meat and this is the version that has become incredibly popular in the UK.

Not quite filling enough for lunch or dinner, and not really suitable at breakfast time, it wasn’t until a taste.com.au team morning tea where I discovered just how delicious these little morsels are.

The crumb was beautifully crisp and golden brown, and the savoury sausage layer paired perfectly with the mild flavours of egg. It reminded me of a homemade sausage and egg English muffin, only crunchy! It made excellent finger food at our gathering… and I suspect it would go down a treat at dinner parties and picnics.

Making scotch eggs at home is surprisingly easy. All you have to do is wrap boiled eggs in sausage mince, coat in breadcrumbs and cook. Better yet, this air fryer version makes them a lot less fiddly, as there’s no need to faff around with hot oil and a deep fryer. 

Plus, using pre-seasoned pork sausages is a great shortcut for adding loads of flavour without having to empty your entire herb and spice collection to the mix. Once the eggs have been covered, you simply have to dip them in beaten eggs and dried breadcrumbs to coat before air frying for about 20 minutes.
