It wouldn’t be an Aussie Christmas without a plate of rocky road. Whether it’s our OG rocky road slice (with a solid 5-star rating!) or that espresso martini winner, they all have two things in common:
  1. They’re absolutely delicious (duh!)
  2. They all contain marshmallows

In our eyes, it’s not a rocky road without marshmallows… right? Well, according to Curtis Stone, the sweet, fluffy mallow treat doesn’t make the cut.

When we got the chance to catch up with Curtis and chat about all things Christmassy, we knew we had to find out his tips, tricks and opinions for festive treats. But when we asked about his favourite rocky road ingredients, his response shocked us.

Curtis said: “This is a little controversial, but I don’t like marshmallows.” That’s an unpopular opinion if we’ve ever heard one. We don’t think we’ve ever met a rocky road without marshmallows!

So, what DOES Curtis Stone put in his Christmas rocky road? It turns out, he goes down more of a traditional route.

“With rocky road, what I think makes it really delicious is the chocolate and the dried fruit. I like lots of raisins, maybe even dates.” You can’t go wrong with the classic fruit, nut and chocolate combo!

Meet the rocky road house

Talking of controversial Christmas dishes, we’ve decided to swap the spice of gingerbread for chocolate and lollies this year. Yes, a rocky road house is now on the block. Made from chocolate mud cake, Flake chocolate, nuts, lollies and marshmallows (sorry Curtis!), it’s the Christmas renovation that will have your guests saying “WOW”.

We also asked Curtis to choose between Australia’s most iconic Christmas dishes… and we were surprised at some of his responses. He opted for Christmas lunch over dinner, prawns not oysters and potatoes instead of coleslaw. He said he prefers gravy over cranberry sauce and ham over turkey too.

The most surprising was probably that he chose trifle over pavlova. That’s almost as shocking as not liking marshmallows in your rocky road, I guess.
