The humble hash brown is the latest hack ingredient of choice — and the dish people are making with it is lasagne.

Apparently the trend kicked off in an Aussie parenting group, but let’s be honest: hash browns have actually extended well beyond breakfast for some time (remember when an Aussie couple went viral for making air fryer hashies loaded with cheese and bacon?).

So that means it’s time for the potato gems to make some room — even though there were some tasty recipes like the creamy potato gem bake and potato gem nachos.

How to make hash brown lasagne

Taste’s food editor Alison Adams is always keen to give food products an exciting makeover, but wasn’t 100 per cent sold when she first heard of the hash brown trend.

“I was a bit taken aback but that only lasted a nanosecond as I immediately thought of the moussakas I’ve eaten with a potato layer (my next experiment),” she says.

She took it upon herself to make a hash brown lasagne … and she’s now a convert.

“There’s a strange alchemy that happens when the dish is baked,” she says.

“The hash browns sort of break down, uniting the meat and bechamel layers in a way a typical lasagne doesn’t. What you get is a creamy, cheesy slab of ultimate comfort food.”

Alison’s insider tip: She “made a rookie error” using oval hash browns when she tried this dish for the first time.

“You need the perfect rectangles,” she insisted.

Why hash brown lasagne is a game-changer

There are so many reasons we love hash browns in place of lasagne sheets.

They offer a pretty nifty shortcut, as this dish is prepped in just 10 minutes. They also bring two new textures that regular lasagne and cottage pie just don’t have: squidgy and crispy (yes, they are professional food adjectives).

Alison says that, unlike pasta lasagne, it’s easy to make this dish coeliac-friendly.

“The brand of hash browns I bought were gluten free, so if you make your own gluten-free bechamel, it’s perfectly suitable … and still delicious.”

But the real winning factor is that, because of the size of the hash browns, your lasagne is already portioned out for you. This means there’s no knife required and nobody can complain that they got a smaller piece.
