5 ingredients that will transform your scones (that aren't lemonade)

Flour, butter and milk: ingredients you probably have at home, and the three ingredients needed to make basic (but oh-so-tasty) scones. The great thing about scones is not only are they one of the easiest arvo tea treats to make but there are so many ways to make ‘em a little fancier. 

One of the most notable upgrades has to be the lemonade scone. Lemonade is the magic ingredient that saves scones from being dense and dry and transforms them into light and fluffy morsels of goodness (plus, it adds a touch of sweetness). 

But lemonade isn’t the only superhero. Here are five other ingredients that our expert foodies use to take scones to the next level. 

Natural yoghurt

In our opinion, yoghurt is one of the best but most underrated ingredients to use in baking: every bake that yoghurt touches turns into gold (and by gold, we mean ultra-moist deliciousness). In scones, yoghurt helps to prevent them going dry – especially if you’re a serial over-kneader of scones. In these healthier blueberry scones, the yoghurt not only increases the moist factor but is a little healthier than using cream: an ingredient common in many scone recipes.

Custard powder

You may well already have a box of custard powder sitting at the back of the pantry waiting to be used (we do). Get ready to dust that box off and get it out, because these custard powder scones are seriously good. The powder adds a subtle custardy, vanilla flavour to the scones that’s hard to beat. They’re the perfect vehicle for jam and cream, but EVEN better with the custard cream that we enjoyed them with.

Soda water

Like lemonade, the bubbles in soda water help aerate the dough. It doesn’t add any extra flavour or sweetness like lemonade does though, so you can really control the sweetness of your scones. This is great for people who love a breakfast scone spread with butter and Vegemite instead of the usual sweet toppings.

Condensed milk

Condensed milk has to be one of our favourite pantry staples. It’s the star in so many of our most popular recipes and if we could, we’d happily drink condensed milk like water (don’t worry, we don’t). Since condensed milk makes everything better, it was fair to assume that it would make scones better. The verdict? 10/10 DELISH. Our condensed milk scones are soft, sweet and fluffy: a sure rival to Nan’s traditional scones. Serve these scones warm and drizzle with warm caramel sauce, whipped cream and raspberries for an indulgent afternoon treat.

Solo

Since lemonade is such a classic ingredient in so many of the best scone recipes, we figured other soft drinks could also produce some pretty awesome scones – and we were right! Everyone’s favourite lemon-flavoured soft drink is the star in one of our favourite scone recipes. Like using lemonade in scones, the Solo keeps the scones fluffy without you putting in the hard work and leaves a subtle lemony flavour that pairs well with cream and lemon curd to serve. Plus, these scones only take 30 minutes to make thanks to the icon that is the pie maker (because using a pie maker for anything other than making pies is our forte).
