Sullivans Cove Distillery unveils plans to move back to its original home in Hobart

THE owners of an iconic whisky distillery have announced the business will return to its founding location on Hobart’s waterfront.
Sullivans Cove Distillery, currently based at Cambridge, has unveiled plans for a distillery and visitor experience at the Huon Quays site in the Sullivans Cove precinct.
The development would involve the construction of a new building as a permanent home for whisky production.
The company said it would see the creation of many distilling and hospitality jobs, adding to the current team of 30.
Managing director Adam Sable said the move back to Sullivans Cove was more significant than just a physical relocation.
“Huon Quays isn’t just a picturesque location for us to create a world-class distillery and visitor experience,’’ he said.
“In relocating back to the Hobart waterfront at Sullivans Cove, we are coming home to where our story began almost three decades ago.”
Head distiller Heather Tillott said the move would enable the team to continue making quality spirits, but to “keep doing it better”.
“A move like this will be done delicately and mindfully from a production perspective, to ensure we keep the particular essence of our spirit which makes us who we are,’’ she said.
The company said it had won “world’s best” awards three times in the past six years.
Sullivans Cove Distillery was founded in 1994 and was originally located at the old Gasworks site in Sullivans Cove.
It moved to Cambridge in 2004 where production, cellar door and storage facility currently operate.
