Former SA Miss Universe contestant Lauren Walker has announced her engagement to boxer Mitch Leek.

The longtime lovers shared the news on Sunday, posting a series of snaps together at Ms Walker’s family farm in Furner captioned: ‘You and I, until the end of time’.

The SA beauty, who was crowned Miss Congeniality at the 2023 Miss Universe Australia contest, posted a recap of “the best weekend” of their lives on her Instagram story.

On Saturday, the former Australian middleweight champion “sneakily set up the proposal” at sunrise which included sending Ms Walker, 28, on a trip around the countryside collecting letters.

“I thought I was going to ‘brunch’ with @__ellaroberts,” she wrote on Instagram.

“Little did I know @mitch_leek had set up the most magical morning.

“Letters and a trip to find them around the countryside – shared our most special moments and memories.”

Ms Walker shared one of the letters written “with love beyond measure” by her now fiance.

“To my Lauren, as you read this your dream is soon to become reality,” he wrote.

“To be a fiance, a wife and most importantly, mine for life.”

After collecting each letter, she found Mr Leek, 25, waiting to pop the question surrounded by roses.

The couple spent the remainder of the weekend celebrating their engagement in style with their nearest and dearest.

This included showing off the “star of the show” – a bespoke Babyanything diamond ring.

“5 years ago I had known I would one day want Lucie to create my ring,” Ms Walker wrote.

“Never did I think together her and Mitchell would exceed every expectation and create such love and art in every intricate detail.

“They spent months awaiting the perfect stone – perfect cut, colour and quality because I ‘deserve perfection’ and she is PERFECT!”

The inside of the ring features both of their initials and birthstones, aquamarine and tourmaline, for the “final personal touch.”

Prior to the proposal, Mr Leek secretly recorded “every part of the ring making process.”

“I was able to watch all the videos as he talked about each part of the process and the love and thoughts that he poured into creating each aspect,” she wrote.

“Plus him opening it and seeing it for the first time. It takes my breath away.”

Originally from Furner, near Beachport in the state’s South-East, Ms Walker moved to Nar Nar Goon in Gippsland, Victoria, five years ago after meeting Mr Leek, with whom she now helps run MJL Racing.

A successful boxer in his own right, Mr Leek is descended from horse racing greats with his ancestors winning a Melbourne Cup and a Caulfield Cup.
